Pomegranate and Saffron ice cream

Usually it is with great reluctance that i enter the kitchen to try something new. Today when i logged in to face book page the first post was a picture of  ice cream by Suma- hari prasad Nadig, my friends on the Face Book. It said pomegranate and saffron ice cream without any additives. I had pomegranates in abundance. i love to eat the seedlings with sugar. Niha is out of town. Malavika is not a fan of Pomegranates and husband is too busy to eat. So i thought will give this ice cream a try. The Picture was so tempting that i did not wait for them to share their recipe.

This is how i did it and it turned out well. I just did a small quantity on a trial basis.

u need : 2 cups of thick milk, half a pomegranate, brown sugar to taste and few strands of saffron/kesar.


Heat the milk till it thickens to half. Soak 5-6 saffron strands in a 2 tea spoon of milk. Meanwhile de-seed the fruit and keep half aside. the other half portion squeeze till u get some juice of it. discard the seed if any. (I put the seeds in a strainer and pressed with a spoon. if you have better ideas please do share..it will help me when i make pom jellies).  Add the brown sugar to the thickened milk. add sugar little by little and taste till you get the right amount of sweetness. After it cools down put it in the freezer. when it is half set remove it out and add saffron, juice, pomegranate seeds mix and again put it in the freezer. when it is set remove and run in blender till it is fluffy. again freeze till completely set. the whole process will take around four to six hours. scoop and serve decorated with pomegranate seeds.
